The Coughlin family’s purchase of the 117-acre former Laufred Farms marked the beginning of what would become a testament to craft distilling excellence.
What started as Paul Coughlin’s ‘gentleman’s hobby’ quickly evolved into something much more significant. The discovery of the land’s pristine water source and access to high-quality local grains revealed the property’s true potential. Rolling Hills Farm, as it was renamed, proved to be the perfect canvas for creating exceptional spirits.
The transformation from hobby to craft distillery was driven by an unwavering commitment to quality and a deep respect for the region’s rich distilling heritage. By 2015, this passion led to the construction of a 5,000-square-foot distillery, complete with a bottling line, aging rickhouses, and a welcoming tasting facility that houses over 200 different bourbons.
