Who we are

For 125 years, the buildings that now house Nyborg Distillery were workshops for Danish State Railway freight trains. Here, at the very heart of the kingdom of Denmark, intrepid men kept Denmark running. When the Great Belt Bridge opened, the workshop shut down its entire 4,000-m2 facility, and for more than 13 years everything stagnated and fell into disrepair. It was not until 2017 that the buildings gained a new lease of life, when Niels and Nicolai Rømer opened one of the largest distilleries in Denmark. But the whisky adventure had already started in the Ørbæk Brewery basement back in 2009, when they launched the production of whisky, gin and rum. Production continued here until it had expanded to such an extent that new premises were called for. Of course, the products are all organic, and several of them have won medals in some of the most acclaimed spirits competitions in the world. The distillery also has its own Organic Gold Label restaurant and a shop selling the distillery’s own products and a selection of beers and soft drinks from Ørbæk Brewery.

Whisky

Our love of Scotland and Scotch whisky are a major source of inspiration when we make our own organic whisky. But that does not restrict us. We create our own adventure. That applies to both the whisky and all the other types of spirit we produce.

Little Isle

Whiskey 43% alk. vol. 70 cl. Little Isle is part of our Isle of Fionia whiskey series. It is a young and welcoming whiskey that offers both fruitiness and sweetness.

Danish Oak

Whiskey 46% alk. vol. 70 cl. For us, the Isle of Fionia Danish Oak is not just a whiskey. It is a child of the heart, who testifies to the fantastic transformations that both cask and whiskey must go through to create something as beautiful as our Isle of Fionia Danish Oak. Boosted in casks of Danish oak from Funen of the type Quercus Robur, in Danish called Stilkeg or Ordinary Oak.

Ardor

Whiskey 46% alk. vol. 70 cl. Isle of Fionia Ardor is a fruity, light and sweet Danish whiskey. It is the winner of WSA Gold, IWSC Outstanding Silver, SFWSC Silver, NYWSC Silver, ISC Silver and Spirits Masters Silver.

Peated

Whiskey 48% alk. vol. 70 cl. Isle of Fionia Peated is our first smoked whiskey. We are proud of it, and of course it is also organic.

Ultimate Splendeour

Whiskey 48% alk. vol. 70 cl. Isle of Fionia Peated is our first smoked whiskey. We are proud of it, and of course it is also organic. Whiskey 51% alk. vol. 70 cl. Full-bodied, soft and complex third bottling of an Oloroso cask we filled in September 2019. Before that, the whiskey had been aged for a few years in Portuguese STR wine casks. After five years, our Iberian journey is now complete with the final bottling of the trilogy Iberian Beauty.

Blunderbuss Showdown

Whiskey 52.9% alk. vol. 70 cl. Blunderbuss Showdown is something very special. We wanted to try something new. So instead of making the usual taste notes that describe aroma and taste, this time we have drawn how the whiskey tastes! When you buy a bottle of Blunderbuss Showndown, you get a nice illustration, so you can also form a story when you taste the whiskey.

The Darling

Whiskey 53.3% alk. vol. 70 cl. We have chosen to call part two of our Iberian Beauty series The Darling - we love this whiskey, and we hope you get it too. Last year we tapped Barely Legal, which was part I of the series, and the time has now come to tap part II - The Darling. It has been given a year more on cask, which has given more fullness, sweetness and complexity to the whiskey. Do you want a specific number? 10 Years Old

Whiskey 59.9% alk. vol. 70 cl. We are proud to launch our first 10 year whiskey. Adventures Spirit 10 Years Old is part of our Adventures Spirit series, which means we will never make this whiskey again. Adventures Spirit 10 Years Old is a medium smoked whiskey with light notes of sweet fruit.

Cask Nº1

Whiskey 58% alk. vol. 50 cl. Cask No 1 is the first whiskey we have ever made. It was casked in 2009 and bottled in 2012. It is therefore a young whiskey, but it still tastes great. We have only bottled 362 bottles of this whiskey, and thought that they were all gone until we found about 100 bottles hidden away at Ørbæk Brewery, where it was once bottled. We have now put them up for sale, and you have the opportunity to grab one of these exclusive bottles. Scent: Fruity, especially with light notes of green apples and vanilla. A fresh and crisp scent that only tingles a little in the nose. Opens nicely with a few drops of water, and all scent impressions are enhanced. Taste: Matches the scent; fruity fullness and freshness, tingling and tingling on the tongue and palate, with a good about a modest aftertaste, where the good oak dish, however, does not deny itself. Absolutely unique example of the distillery's whiskey style and distinctiveness, which is also found in Ardor.

Juniper lends gin the distinctive taste that characterises it. But that does not mean you cannot pack your gin with other exquisite tastes.

Aquavit

That ‘wee dram’ (as they say in Scotland) that we all know from lunch – and, on a good day, at breakfast too – is making a comeback in Denmark. We have done our utmost to create three beautiful aquavits, each with its own special taste, so you can always find one to suit both food and mood.

NYBORG AKVAVIT - DANSK EG

Aquavit 40% alc. vol. 50 cl. A caraway aquavit with clear cask notes of vanilla and baked goods. Ideal for a cheese board or a freshly-smoked mackerel.

NYBORG AKVAVIT - DILD

Aquavit 38% alc. vol. 50 cl. We distilled this aquavit using dill, coriander seed and sea buckthorn. Perfect with an open faced prawn sandwich or fresh fish.

NYBORG AKVAVIT - KOMMEN

Aquavit 40% alc. vol. 50 cl. Our Nyborg Akvavit Kommen is a classic aquavit with a sweet fragrance of orange peel, flowers and fruit.
