Defiance Spirits was launched in 2017 – the next venture of my passion for food & drink.
Having travelled the world with my wife in my 20s discovering a variety of amazing food and wine, I finally got to follow my passion in the mid-2000s when I opened an award winning deli. From there, alongside a number of entrepreneurs, I continued to develop and open a number of food & drink establishments in the North of England whilst I studied for my WSET 4 diploma. As a part of the diploma, I wrote a dissertation on the renaissance of gin, interviewed Batch Brew Gin in Burnley and the rest is history really. Next thing I knew I was learning my gin trade at Batch and finally launching my own craft gin…
Defiance Spirits represents my passion for quality & design. The recipe was developed over 6 months experimenting with a number of foraged botanicals whilst the design & brand was co-created with an incredible graphic designer and is an expression of the foraged uniqueness of the gin. Defiance in Nature – Nature every year goes through a cycle of life; growing, blooming, dying and then after a barren winter, nature (our botanicals) fights back to grow in spring once again. Defiance in Spirit – representing our innate need to survive every day challenges & thrive – both from within & out. Bouncing back is the perfect metaphor in life & nature.
MAPLE TOFFEE VODKA
The worlds most decadent toffee vodka. Defiance Distillery organic triple distilled vodka is blended with slabs of real maple toffee imported from Quebec, Canada.
The result is something truly special.

DEFIANCE PREMIUM GIN
Distinctive handpicked botanicals are handpicked from Lancashire, Yorkshire, Wales and Anglia.
Defiance is a premium gin. Foraged, distilled and bottled in the U.K. 14 Botanicals create a sublime smooth and more-ish gin. A wonderful depth of flavour with an earthy backbone giving way to fresh citrus and wonderful notes of anise.

DEFIANCE SPICED RUM
Spices – cloves, nutmeg, vanilla pods, allspice, dehydrated oranges, burnt molasses sugar, birch tree syrup and foraged seeds.
Defiance Rum is a contemporary foraged rum. It’s blend of traditional spices are enhanced with foraged seeds and birch tree syrup to offer a rum that stands out from the crowd.

SPIT-FIRE SPICED GIN
Flight Club Spit-Fire Spiced Gin.
Inspired by the spices of the Indian Bazaar Markets. Spit-fire Gin blends the familiar Juniper, Coriander, Angelica, Lemon & Orange peel with the extraordinary; Lemba Fruit, Mustard Seed, Fenugreek and a Birds Eye Chilli. To deliver a 20 botanical journey of exploration with the added chilli retro burner.

Cold Filtered Super Premium Cafe Abaco Espresso Beans, sugar, seville oranges, liquorice root, lavender, grains of paradise, star anise, lemon with London Dry botanicals.
Distilled using stealth technology. This espresso infused jet fuel will have you in supercruise before you’ve been zipped up in your flight suit.
