The Outlaw Spirit of the Sonoran Frontier

For nearly 400 years, Bacanora has been the hidden soul of Sonora, Mexico. But its story is one of defiance, not just tradition. In 1915, the Governor of Sonora outlawed its production, deeming it a “sinful” indulgence. For 77 long years, until 1992, Bacanora was forced underground. It became a moonshine spirit, kept alive by bacanoreros, growers, artisans, and outlaws, who risked imprisonment and even death to preserve their heritage in secret stills hidden within the Sierra Madre mountains.

Estaca Bacanora is the proud revival of this rebellious legacy. We are rooted in Quiriego, Sonora, where the Alaniz family has cultivated Agave Pacifica for generations. Our philosophy marries this rugged history with uncompromising modern quality. Founded by Master Sommelier Emmanuel Kemiji, we treat Bacanora with the reverence reserved for fine wine. We harvest only mature, organic agave and roast it in traditional earthen pits to unlock a deep, savory character. Yet, we refine this raw intensity through double distillation in copper and steel, ensuring a spirit that is incredibly smooth and free of additives.
