The journey begins in our carefully tended agave fields, where Blue Weber agaves mature for seven years under the watchful eyes of experienced cultivators. These precious plants, grown without pesticides and harvested by hand, represent our commitment to sustainable and natural production methods. Each agave is selected at peak maturity, ensuring optimal sugar content in their hearts – the piñas – which will eventually transform into our exceptional spirit.
At the prestigious Hacienda la Capilla, one of Mexico’s finest distilleries, our Master Tequilero Jaime Villabos Sauza – himself a descendant of five generations of Master Tequileros – oversees a meticulous production process. The agave hearts undergo an eight-hour cooking process in traditional autoclave ovens, followed by a crucial four-hour rest period. The subsequent grinding, using four three-mass mills, initiates the journey from plant to spirit.
What truly sets Celosa apart is our innovative aging process. After double distillation in copper alembics, where “heads” and “tails” are carefully removed to ensure supreme quality, our tequila experiences a unique transformation. For 21 days, it rests in French oak barrels previously used for Merlot wine from El Valle Guadalupe’s leading vineyards. This revolutionary process creates our signature natural rosé color and introduces an incomparably smooth texture.
