For Gin Machine, that moment came in London when three friends, Ricardo, Cleide, and Iñigo, discovered the perfect harmony between gin and oysters. Our journey led us through countless experiments with various seaweeds until we discovered our secret ingredient: a specific variety of Galician seaweed that, when dried for precisely 14 days, releases the perfect balance of maritime flavors. In our Madrid distillery, we embrace both tradition and innovation. Each batch is crafted using a copper still and the traditional one-shot process, where botanicals are macerated for 7 days and slowly distilled for 12 hours.
